For the first year and a half we were dating, Bruce and I did a lot of eating out and ordering in. What can I say? It was a combination of being happy, and busy. Slowly, we started noticing the “happy and busy” diet was not the healthiest one. So, over the last few months, we have been doing a lot more cooking and less ordering in and eating out. It’s a concerted effort on our part to eat healthier.
We both have a basic amount of skill in the kitchen ….(Bruce came into this relationship able to cook a mean eggplant parmesan, and I inherited some skill at enchiladas and thanksgiving dishes from my mother), but little practice. Now we are slowly branching out, mostly through trial and error.
It came about due to intense dissatisfaction with pizzas ordered from chains. Both Bruce and I love extra sauce, something no pizza chain can deal with. Bruce likes to go “light” on the cheese. I like chunks of tomatoes on top (not thin sliced rounds). We both LOVE black olives in excessive amounts. We have yet to discover any pizza chain (local or national) that caters to these proclivities well. Order a ‘veggie’ pizza, and you usually get one or two vegetable selections scattered lightly across a sea of oily cheese.
So, last night we decided to take matters into our own hands! It basically came out like an intense Greek salad on top of a pizza. But it was also pretty fabulous!
Here are our ingredients:
- Pizza Dough (from Trader Joe’s)
- Pizza Sauce (also Trader Joe’s)
- Fresh Goat Cheese
- Black Olives
- Red Peppers
- Green Peppers
- Baby Portobello mushrooms
- Roma Tomatoes
- Lots of herbs, salt, and pepper!
