Baked Acorn Squash

Looking for a yummy and easy fall dinner?

After extensive pleading on my part, Bruce has agreed to allow me to release his secret recipe for Baked Acorn Squash to the world! (You can thank me later!)

I begged, I pleaded. I told him that the world needed him, and he could help humanity greatly this fall by releasing his patent on this amazing dinner. He looked at me blankly, and said, “Uh, ok. It’s not a secret, really. You can google it.” (Way to burst my bubble Bruce!)

So, here it is! If you want to have amazing healthy dinner that is ridiculously, easy, but delicious, follow these steps:

1. Go to the store and buy one or two of these. They should be about the size of a softball, and make a nice  hollow “thump” sound when you flick them:

2. Wash well, and then chop the sucker, right in half.

3. Drizzle in olive oil, and sprinkle on some salt and pepper.

4. Wrap in foil. Put in oven at 375 for about 45 mins – an hour. Check it around this mark. If it can be easily scooped out with a spoon, and is not still “crunchy” it is probably done.

It should look like this, and taste amazing!
