Lentil Salad

My favorite form of lentils is a very simple lentil salad. It is simply: cooked lentils (chilled in fridge), combined with finely chopped red onions, tomatoes, cucumbers, and feta cheese. Add a very very tiny bit of white wine vinaigrette.

So simple and so yummy! Had it for lunch today, and feel both deliciously satisfied and healthy!
